🍲1. Mutton Rogan Josh
( A Kashmiri classic with rich flavors of spices and yogurt)
Ingredients
500 g mutton (bone-in pieces)
2 onions (finely sliced)
3 tomatoes (pureed)
½ cup curd (whisked)
2–3 tbsp mustard oil (or ghee)
2–3 green cardamoms
2–3 cloves
1 bay leaf
1-inch cinnamon stick
1 tsp fennel powder
1 tsp dry ginger powder
1 tsp Kashmiri red chilli powder
1 tsp turmeric powder
1 tsp coriander powder
½ tsp garam masala
Salt to taste
Fresh coriander for garnish
Method
Heat oil in a heavy pan, add whole spices (cardamom, clove, cinnamon, bay leaf).
Add onions and sauté till golden brown.
Add pureed tomatoes and cook till oil separates.
Stir in turmeric, coriander powder, fennel, dry ginger, and red chilli powder.
Add mutton pieces and sear well on high flame.
Lower the flame, add whisked curd gradually while stirring to avoid curdling.
Add 1–1.5 cups water, cover, and cook on low heat until mutton is tender (or use a pressure cooker for 4–5 whistles).
Finish with garam masala and garnish with coriander leaves.
👉 Best served with Kashmiri naan, steamed rice, or jeera rice.

🍲 2. Spicy Mutton Fry (South Indian Style)
A fiery South Indian-style dry preparation perfect with parotta or rice
Ingredients
500 g mutton (cut into small pieces)
2 onions (sliced)
2 tomatoes (chopped)
2 tbsp ginger-garlic paste
3–4 green chillies (slit)
2 sprigs curry leaves
2 tbsp oil
1 tsp turmeric powder
1 tbsp red chilli powder
1 tsp coriander powder
1 tsp black pepper powder
1 tsp garam masala
Salt to taste
Fresh coriander
Method
Pressure cook mutton with turmeric, salt, and little water until soft (3–4 whistles). Keep aside.
Heat oil in a pan, add curry leaves, onions, and green chillies. Fry until golden.
Add ginger-garlic paste, sauté for 2–3 minutes.
Add tomatoes, cook until mushy.
Mix in red chilli powder, coriander powder, pepper, and salt.
Add the boiled mutton pieces with little stock and fry on medium heat until dry and well-coated with masala.
Sprinkle garam masala, garnish with coriander.
👉 Best enjoyed with parotta, dosa, or steamed rice.
