Sabudana Khichdi – A Light & Nutty Fasting Favorite
Ingredients (Serves 2–3):
- 1 cup sabudana (tapioca pearls)
- 1 medium potato, diced small
- 1/4 cup roasted peanuts
- 2–3 green chilies, chopped
- 1 tsp cumin seeds
- 2 tbsp ghee or oil
- Salt to taste
- Fresh coriander for garnish
- Juice of 1/2 lemon
Method:
- Soak Sabudana: Wash and soak sabudana in water for 4–6 hours or overnight until they swell. Drain excess water.
- Roast Peanuts: Dry roast peanuts and crush lightly.
- Cook: Heat ghee in a pan, add cumin seeds. Once they splutter, add green chilies and diced potatoes. Cook until potatoes are soft.
- Add Sabudana: Mix in the soaked sabudana, peanuts, and salt. Stir gently on low heat for 5–7 minutes until pearls become translucent.
Finish: Add lemon juice, garnish with fresh coriander, and serve hot.
Kuttu ki Puri – Crispy Buckwheat Flatbreads for Navratri Fasting
Ingredients (Makes 6–7 small puris):
- 1 cup kuttu ka atta (buckwheat flour)
- 2–3 tbsp boiled mashed potato (for binding)
- 1–2 tsp ghee or oil
- Salt to taste
- Water as needed
- Oil for deep frying
Method:
- Make Dough: Mix kuttu flour, mashed potato, salt, and ghee. Add water gradually to form a soft dough.
- Shape: Divide into small balls and roll out into small circles using dry flour to prevent sticking.
- Fry: Heat oil in a pan. Deep fry the puris on medium heat until puffed and golden-brown on both sides.
Serve: Enjoy hot with Sabudana Khichdi or curd.
