Dal Tadka (Indian Lentil Stew)  🍛

Perfect for: Cold evenings, served with rice or roti.

Ingredients

  • 1 cup yellow lentils (toor dal or moong dal)

  • 3 cups water

  • 1 onion (finely chopped)

  • 1 tomato (chopped)

  • 2 tbsp ghee or oil

  • 3 garlic cloves (chopped)

  • 1 tsp grated ginger

  • 1 tsp cumin seeds

  • ½ tsp turmeric

  • 1 tsp red chili powder

  • Salt to taste

  • Fresh coriander leaves

Instructions

  1. Wash lentils and boil with water, turmeric, and salt until soft.

  2. In a pan, heat ghee/oil and add cumin seeds.

  3. Add garlic, ginger, and onion; sauté until golden.

  4. Add tomatoes and chili powder; cook until soft.

  5. Pour this tempering over the cooked dal.

  6. Garnish with coriander and serve hot.

Winter tip: A spoon of ghee on top keeps you warm and adds flavor.

🍗 Indian Chicken Curry (Home-Style)

Perfect for: Cozy family dinners in winter.

Ingredients

  • 500 g chicken (bone-in preferred)

  • 2 onions (finely chopped)

  • 2 tomatoes (pureed)

  • 3 tbsp oil

  • 1 tbsp ginger-garlic paste

  • 1 tsp turmeric

  • 1½ tsp coriander powder

  • 1 tsp garam masala

  • 1 tsp red chili powder

  • Salt to taste

  • Water as needed

  • Fresh coriander

Instructions

  1. Heat oil and sauté onions until golden brown.

  2. Add ginger-garlic paste and cook until aromatic.

  3. Add tomato puree and spices; cook until oil separates.

  4. Add chicken and cook 5–7 minutes.

  5. Add water, cover, and simmer 25–30 minutes until tender.

  6. Finish with garam masala and coriander.

Winter tip: Serve hot with naan or steamed rice for maximum comfort.
