Summer Special Recipes: Cool, Fresh & Delicious

Beat the heat with a refreshing Mango Mint Paneer Salad and a light Lemon Garlic Grilled Fish. These easy summer dishes are packed with fresh flavours and perfect for healthy lunches or relaxed evening meals.

Non-Vegetarian Recipe: Lemon Garlic Grilled Fish

Ingredients
  • 2 whole fish (pomfret/trout/sea bass) cleaned
  • 5 garlic cloves finely chopped
  • Juice of 2 lemons
  • 2 tbsp olive oil or butter
  • 1 tbsp chopped parsley/coriander
  • 1 tsp black pepper
  • Salt to taste

Method

  1. Make shallow cuts on the fish and rub with salt, pepper, garlic, lemon juice, and oil.
  2. Marinate for 30 minutes.
  3. Grill on medium heat for 6–8 minutes on each side until nicely charred.
  4. Brush with butter while grilling for extra flavor.
  5. Garnish with herbs and lemon slices.
  6. Serve hot with roasted vegetables or salad.

Perfect for a light and smoky summer meal.

Vegetarian Recipe: Mango Paneer Salad

Ingredients

  • 1 ripe mango diced
  • 150g paneer cubes
  • 2 tbsp pomegranate seeds
  • Few mint leaves
  • 1 tsp honey
  • Juice of 1 lemon
  • Black pepper and salt to taste

Method

  1. Lightly pan-grill the paneer cubes for 2–3 minutes.
  2. In a bowl, combine mango, paneer, and pomegranate seeds.
  3. Mix honey, lemon juice, salt, and pepper to make a dressing.
  4. Pour over the salad and toss gently.
  5. Garnish with mint leaves and chill before serving.

Sweet, tangy, and refreshing for hot weather lunches.
