Non-Vegetarian Recipe: Lemon Garlic Grilled Fish
- 2 whole fish (pomfret/trout/sea bass) cleaned
- 5 garlic cloves finely chopped
- Juice of 2 lemons
- 2 tbsp olive oil or butter
- 1 tbsp chopped parsley/coriander
- 1 tsp black pepper
- Salt to taste
Method
- Make shallow cuts on the fish and rub with salt, pepper, garlic, lemon juice, and oil.
- Marinate for 30 minutes.
- Grill on medium heat for 6–8 minutes on each side until nicely charred.
- Brush with butter while grilling for extra flavor.
- Garnish with herbs and lemon slices.
- Serve hot with roasted vegetables or salad.
Perfect for a light and smoky summer meal.
Vegetarian Recipe: Mango Paneer Salad
Ingredients
- 1 ripe mango diced
- 150g paneer cubes
- 2 tbsp pomegranate seeds
- Few mint leaves
- 1 tsp honey
- Juice of 1 lemon
- Black pepper and salt to taste
Method
- Lightly pan-grill the paneer cubes for 2–3 minutes.
- In a bowl, combine mango, paneer, and pomegranate seeds.
- Mix honey, lemon juice, salt, and pepper to make a dressing.
- Pour over the salad and toss gently.
- Garnish with mint leaves and chill before serving.
