Roasted Masala Makhana (Healthy Evening Snack)
Roasted Masala Makhana – A light, crunchy, and flavorful snack seasoned with aromatic Indian spices, perfect for guilt-free munching anytime.
Ingredients
- 2 cups makhana (fox nuts/lotus seeds)
- 1 tsp ghee or olive oil
- ½ tsp turmeric powder
- ½ tsp red chilli powder
- ½ tsp chaat masala
- Salt to taste
- A pinch of black pepper
Method
- Heat ghee in a pan on low flame.
- Add makhana and roast for 8–10 minutes, stirring continuously until crisp.
- Add turmeric, chilli powder, salt, and black pepper.
- Mix well and switch off the flame.
- Sprinkle chaat masala and toss again.
- Let cool for a few minutes and serve.
Tip: Store in an airtight container for up to a week.

Creamy Makhana Kheer (Traditional Indian Dessert)
Creamy Makhana Kheer – A rich and comforting dessert where roasted makhana is simmered in milk, infused with cardamom and nuts for a festive indulgence.
Ingredients
- 1 cup makhana
- 1 litre milk
- 2 tbsp ghee
- 4 tbsp sugar (or as per taste)
- ¼ tsp cardamom powder
- 8–10 almonds, chopped
- 8–10 cashews, chopped
- A few strands of saffron (optional)
Method
- Roast makhana in ghee for 5–6 minutes.
- Crush half the roasted makhana coarsely and keep the rest whole.
- Boil milk in a heavy-bottomed pan.
- Add the makhana and simmer for 15–20 minutes.
- Add sugar, cardamom powder, almonds, cashews, and saffron.
- Cook for another 5 minutes until slightly thick.
- Serve warm or chilled.
Serving Suggestion: Garnish with extra nuts and a few saffron strands for a festive touch.
