Crispy Corn & Spinach Fritters
Ingredients
1 cup sweet corn kernels (boiled)
1 cup chopped spinach
1 small onion, finely chopped
2 green chilies, chopped
1 tsp grated ginger
½ cup gram flour (besan)
2 tbsp rice flour
½ tsp turmeric
1 tsp red chilli powder
1 tsp cumin seeds
Salt to taste
Oil for frying
Method
Mix corn, spinach, onion, ginger, and green chilies.
Add besan, rice flour, spices, and salt. Sprinkle a little water if needed to form a thick batter.
Heat oil and drop small portions of the mixture.
Fry until golden brown and crisp.
Serve hot with mint-coriander chutney and masala tea.
Cooking Time: 25 minutes
Masala Vegetable Bread Rolls
Ingredients
8 bread slices
3 medium potatoes, boiled and mashed
½ cup green peas, boiled
1 carrot, grated
1 tsp ginger-garlic paste
1 green chilli, chopped
½ tsp garam masala
½ tsp chaat masala
¼ tsp turmeric
2 tbsp coriander leaves, chopped
Salt to taste
Oil for deep frying
Water for sealing bread
Method
Heat a teaspoon of oil and sauté ginger-garlic paste and green chilli.
Add carrots, peas, mashed potatoes, spices, salt, and coriander. Mix well and cool.
Trim the bread edges, dip each slice briefly in water, and squeeze gently.
Place a spoonful of filling in the center and roll tightly, sealing the edges.
Deep-fry until evenly golden and crispy.
Serve with tomato ketchup or spicy garlic chutney.
