Malpua (Traditional Monsoon Sweet Pancakes)

Sweet Monsoon Indulgence
Soft, golden-fried malpuas soaked in fragrant sugar syrup and served with creamy rabri make for the perfect rainy-day dessert.

Ingredients

  • 1 cup all-purpose flour (maida)
  • ¼ cup semolina (sooji)
  • 2 tbsp milk powder (optional)
  • 2 tbsp sugar
  • ½ tsp fennel seeds
  • ¼ tsp cardamom powder
  • 1 cup milk
  • Ghee or oil for frying

For Sugar Syrup

  • 1 cup sugar
  • ½ cup water
  • A pinch of saffron (optional)
  • 2-3 crushed cardamoms

Method

  1. Mix flour, semolina, sugar, fennel seeds and cardamom powder.
  2. Add milk gradually to make a smooth batter. Let it rest for 20-30 minutes.
  3. Prepare a one-string sugar syrup with sugar, water and cardamom.
  4. Heat ghee in a shallow pan.
  5. Pour a ladleful of batter and fry until golden on both sides.
  6. Dip each malpua in warm sugar syrup for 30-40 seconds.
  7. Serve warm with chilled rabri or garnish with chopped pistachios and almonds.

Serving Tip: Best enjoyed with hot masala chai on a rainy evening.

Gur Atta Halwa (Jaggery Wheat Flour Halwa)

Made with roasted whole wheat flour, desi ghee and jaggery, this rich halwa is a wholesome monsoon treat best enjoyed hot.

Ingredients

  • 1 cup whole wheat flour
  • ½ cup desi ghee
  • ¾ cup grated jaggery
  • 2½ cups water
  • ¼ tsp cardamom powder
  • 2 tbsp chopped almonds and cashews
  • 1 tbsp raisins

Method

  1. Heat water and dissolve the jaggery. Strain if needed to remove impurities.
  2. Heat ghee in a heavy-bottomed pan.
  3. Roast the wheat flour on low flame for 12-15 minutes until golden brown and aromatic.
  4. Carefully pour in the warm jaggery water while stirring continuously.
  5. Cook until the halwa thickens and leaves the sides of the pan.
  6. Add cardamom powder, raisins and chopped nuts.
  7. Garnish with more dry fruits and serve hot.
