The Weekend Platter: Two Easy Egg Favourites
Eggs are one of the quickest and most versatile ingredients for a delicious meal. Try a spicy Masala Omelette packed with onion, tomato, green chilli and coriander, or enjoy the comforting, flavourful Egg Bhurji, scrambled with Indian spices and fresh vegetables. Both are simple to prepare and perfect with toast, roti or pav.

🍳 1. Masala Omelette
Ingredients:
- 2 eggs
- 1 small onion, finely chopped
- 1 small tomato, chopped
- 1 green chilli, chopped
- 1 tbsp coriander
- Salt to taste
- ¼ tsp turmeric
- ¼ tsp red chilli powder
- 1 tsp oil
Method:
- Beat the eggs with salt, turmeric and chilli powder.
- Add onion, tomato, green chilli and coriander. Mix well.
- Heat oil in a pan and pour in the mixture.
- Cook on medium heat until the bottom is set, then flip and cook the other side.
- Serve hot with bread, roti or toast.

🥚 2. Egg Bhurji
Ingredients:
- 3 eggs
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chilli
- 1 tbsp coriander
- ¼ tsp turmeric
- ½ tsp red chilli powder
- Salt to taste
- 1–2 tsp oil
Method:
- Heat oil and sauté onion until lightly golden.
- Add green chilli and tomato; cook until soft.
- Add turmeric, chilli powder and salt.
- Beat the eggs separately and pour them into the pan.
- Keep stirring gently until the eggs are cooked and crumbly.
- Garnish with coriander and serve hot with toast, roti or pav.
