A crunchy, flaky and mildly spicy traditional Indian snack that stays fresh for several days when stored properly.
Preparation time: 20 minutes
Cooking time: 25–30 minutes
Makes: 25–30 pieces
Ingredients
2 cups maida (all-purpose flour)
¼ cup semolina (sooji)
4 tbsp ghee
1 tsp ajwain (carom seeds)
1 tsp crushed black pepper
½ tsp red chilli powder
½ tsp kasuri methi (crushed)
½ tsp salt (or to taste)
Water as required
Oil for deep frying
Method
In a mixing bowl, combine maida, semolina, ajwain, black pepper, chilli powder, kasuri methi and salt.
Add ghee and rub it into the flour until the mixture resembles breadcrumbs.
Gradually add water and knead into a firm dough. Do not make it soft.
Cover and rest the dough for 15–20 minutes.
Divide into small portions and roll into small discs.
Prick each disc with a fork so that it does not puff up while frying.
Heat oil on low to medium heat.
Fry the mathris slowly until golden and crispy.
Remove and cool completely before storing in an airtight container.
Special tip: Add a pinch of hing (asafoetida) and crushed kasuri methi for an extra flavourful, Gujarati-style touch.
