Crispy Aloo Pakoras (Potato Fritters)

Ingredients

2 large potatoes (thinly sliced)

1 cup gram flour (besan)
-
1/2 tsp turmeric
-
1/2 tsp red chili powder
-
1/2 tsp carom seeds (ajwain)
-
Salt to taste
-
Water (to make batter)
-
Oil for deep frying
Method

Mix gram flour, spices, salt, and ajwain. Add water to make a thick batter.

Heat oil in a pan on medium heat.

Dip potato slices in batter and gently drop into hot oil.

Fry until golden and crisp.
-
Serve hot with green chutney or ketchup.
Sweet Corn Butter Masala
Why it’s great in winter: Warm, buttery, and mildly spicy—very comforting.
Ingredients

2 cups boiled sweet corn
-
1 tbsp butter
-
1/2 tsp red chili powder
-
1/4 tsp black pepper
-
Salt to taste
-
Lemon juice (to taste)
-
Chopped coriander (optional)
Method

Heat butter in a pan and add boiled corn.

Add chili powder, pepper, and salt. Mix well.

Cook for 2–3 minutes on low heat.
-
Add lemon juice and garnish with coriander.

Serve hot in a bowl or cup.
