Gajar-Gobhi-Shalgam: A Classic Winter Pickle Packed with Flavor
Ingredients
- Carrots – 500 g (cut into sticks)
- Cauliflower – 500 g (small florets)
- Turnip – 500 g (cubed)
- Mustard oil – 1.5 cups
- Jaggery – 350 g
- Vinegar – ½ cup
- Red chilli powder – 2 tbsp
- Turmeric – 1 tbsp
- Salt – 2 tbsp
- Mustard seeds (crushed) – 3 tbsp
- Fenugreek seeds (crushed) – 1 tbsp
- Nigella (kalonji) – 1 tsp
Method
- Boil the vegetables for 3–4 minutes and drain well. Sun-dry for 2–3 hours.
- Heat mustard oil until smoking point, then cool slightly.
- Add all spices and mix.
- Melt jaggery in vinegar and add to the spice-oil.
- Add vegetables and mix well.
Store in a clean jar. Ready in 3–5 days.

Ingredients
- Green chillies – 250 g (slit lengthwise)
- Mustard oil – ½ cup
- Mustard seeds (coarsely ground) – 2 tbsp
- Fennel seeds (crushed) – 2 tbsp
- Fenugreek seeds – ½ tsp
- Turmeric – 1 tsp
- Asafoetida – a pinch
- Lemon juice – 3 tbsp
- Salt – to taste
Method
- Heat mustard oil until it smokes, then cool slightly.
- Add asafoetida and spices.
- Add chillies and salt; cook 2–3 minutes on low flame.
- Turn off gas, add lemon juice, and mix.
Store in a clean jar. Ready in 1–2 days.
