Gajar-Gobhi-Shalgam: A Classic Winter Pickle Packed with Flavor

Ingredients

  • Carrots – 500 g (cut into sticks)
  • Cauliflower – 500 g (small florets)
  • Turnip – 500 g (cubed)
  • Mustard oil – 1.5 cups
  • Jaggery – 350 g
  • Vinegar – ½ cup
  • Red chilli powder – 2 tbsp
  • Turmeric – 1 tbsp
  • Salt – 2 tbsp
  • Mustard seeds (crushed) – 3 tbsp
  • Fenugreek seeds (crushed) – 1 tbsp
  • Nigella (kalonji) – 1 tsp

Method

  • Boil the vegetables for 3–4 minutes and drain well. Sun-dry for 2–3 hours.
  • Heat mustard oil until smoking point, then cool slightly.
  • Add all spices and mix.
  • Melt jaggery in vinegar and add to the spice-oil.
  • Add vegetables and mix well.

Store in a clean jar. Ready in 3–5 days.

Ingredients

  • Green chillies – 250 g (slit lengthwise)
  • Mustard oil – ½ cup
  • Mustard seeds (coarsely ground) – 2 tbsp
  • Fennel seeds (crushed) – 2 tbsp
  • Fenugreek seeds – ½ tsp
  • Turmeric – 1 tsp
  • Asafoetida – a pinch
  • Lemon juice – 3 tbsp
  • Salt – to taste

Method

  • Heat mustard oil until it smokes, then cool slightly.
  • Add asafoetida and spices.
  • Add chillies and salt; cook 2–3 minutes on low flame.
  • Turn off gas, add lemon juice, and mix.

Store in a clean jar. Ready in 1–2 days.
