Undhiyu
Ingredients: Purple yam (suran), potatoes, sweet potatoes, raw banana, brinjals, green beans, fresh coconut, coriander, green garlic, sesame seeds, ginger, green chili, groundnut oil, spices, lemon juice
Method:
Make a coarse masala using coconut, coriander, green garlic, sesame seeds, ginger, chili, and spices. Stuff brinjals with this masala and mix remaining masala with chopped vegetables. Add oil and salt, mix well, and slow-cook on low flame or pressure cook lightly. Finish with lemon juice and fresh coriander. Serve hot with puri.
Til Chikki
Ingredients: White sesame seeds, jaggery, ghee
Method:
Dry roast sesame seeds until aromatic. Melt jaggery with a little ghee until it reaches soft-ball stage. Mix in sesame seeds quickly. Spread on a greased surface, flatten thin, and cut into squares while warm.
Tal Sankadi (Sesame Barfi)
Ingredients: Sesame seeds, jaggery, ghee, cardamom powder
Method:
Dry roast sesame seeds and grind them coarsely. Prepare jaggery syrup until thick. Add ground sesame seeds, ghee, and cardamom. Mix well, spread in a greased plate, allow to set, and cut into pieces.
Bajra no Rotlo
Ingredients: Bajra flour, warm water, salt, ghee
Method:
Mix bajra flour and salt. Gradually add warm water and knead into a soft dough. Pat the dough by hand to form a thick roti. Cook on a hot tawa, flipping and pressing until cooked. Apply ghee and serve hot.
Ringna no Olo
Ingredients: Large brinjal, onion, garlic, green chili, oil, salt
Method:
Roast brinjal directly on flame until skin is charred. Peel and mash. Add finely chopped onion, crushed garlic, chili, oil, and salt. Mix well and serve with bajra no rotlo.
Sing Pak
Ingredients: Roasted peanuts (coarsely ground), jaggery, ghee, cardamom powder
Method:
Heat jaggery and ghee together until thick. Add ground peanuts and cardamom. Mix quickly, spread on a greased plate, let it cool slightly, and cut into squares.
