Bringing the rich culinary heritage of Old Delhi to the city, ITC Narmada, Ahmedabad’s luxury collection hotel, will host “Dehlnavi Dawat”, a special food festival at its signature all-day dining restaurant, Adalaj Pavilion, from March 14 to March 22.

The dinner buffet, available from 7:00 pm to 11:30 pm, will offer guests an immersive journey into the historic food culture of the capital. The festival celebrates heirloom recipes and slow-cooked delicacies that showcase the bold, street-inspired flavours that have defined the gastronomic legacy of Shahjahanabad for generations.

The culinary experience will be curated by Chef Mohammad Mofid, Senior Master Chef from Sheraton Delhi, who specialises in Awadhi and Dehlnavi cuisine. Hailing from a family of chefs in Faizabad, Uttar Pradesh, Chef Mofid began his culinary journey learning traditional cooking techniques at home. Over the years, he has developed deep expertise in the cuisine of Old Delhi and has played an active role in promoting authentic Indian flavours on international culinary platforms.

Speaking about the festival, Executive Chef Sumeet Rohela of ITC Narmada said,“At ITC Narmada, we strive to bring authentic regional culinary traditions to our guests. Dehlnavi Dawat celebrates the rich and layered food heritage of Old Delhi — a cuisine shaped by centuries of history, bustling bazaars and time-honoured recipes. With Chef Mofid curating this experience, we are delighted to present dishes that capture the rustic warmth and robust flavours of Dehlnavi cuisine, offering diners in Ahmedabad a truly immersive gastronomic journey.”

The festival menu showcases a thoughtfully curated selection of traditional dishes that reflect the diverse culinary traditions of Old Delhi. Guests will be welcomed with Mohabbat Ka Sherbet, a refreshing beverage made with milk and rose, synonymous with the city’s summer streets.

The experience begins with a lively chaat counter featuring classics such as Kulle Ki Chaat, Dahi Gujiya and Aloo Ki Tikki, evoking the vibrant street food culture of Delhi.

The starters feature a mix of vegetarian and non-vegetarian delicacies including Teekhe Matar Ke Kebab, pan-seared patties made with spiced green peas, Jimikand Ki Malai, delicate yam patties with a creamy texture, Sil Batte Ki Shammi, hand-pounded lamb and lentil kebabs pan-grilled to perfection, and Quile Mohalle Ki Seekh, charcoal-finished minced lamb kebabs inspired by the kebab houses of Old Delhi.

The main course highlights comforting and flavourful preparations such as Paneer Laung Latika, stuffed cottage cheese sealed with clove, Lehsooni Palak Motia, cottage cheese dumplings in a velvety garlic-flavoured spinach gravy, Hing Dhaniye Ke Chatpate Aloo, baby potatoes tossed with asafoetida and fenugreek seeds, and Kunni Dal, a slow-cooked blend of Bengal gram and black lentils. Rice offerings include Nimona Mirch Pulao, fragrant basmati rice enriched with whole green chillies and peas paste.

Non-vegetarian specialties include Gosht Nihari, tender lamb simmered in a rich brown onion and saffron gravy, Murg Ishtoo, chicken cooked with whole spices in a curd and tomato gravy, and Sarai Ki Gosht Biryani, where lamb and basmati rice are cooked together with aromatic spices and finished with crisp angel-hair onions.

The experience concludes with traditional desserts such as Shahi Tukra, saffron-soaked bread topped with sweetened reduced milk, and Motia Zarda, fragrant sweetened basmati rice delicately flavoured with saffron and khoya dumplings.

“Dehlnavi cuisine reflects the soul of Old Delhi — its streets, its families and its centuries-old culinary traditions. Many of the dishes featured in this festival are inspired by recipes passed down through generations and perfected through slow cooking and a careful balance of spices. Through this menu, I hope guests can experience the authenticity, nostalgia and depth of flavour that make Delhi’s food so beloved,” said Chef Mofid.

Through this limited-period culinary showcase, ITC Narmada aims to bring the nostalgia, warmth and enduring flavours of Old Delhi’s celebrated food traditions to Ahmedabad.
